Lentil Sloppy Joes

You'll always be prepared for a quick dinner option with lentils and some pantry staples.

Lentil Sloppy Joes:   PRINT RECIPE

Serves: 4-5

Ingredients

LENTILS

  • 2 cups water

  • 1 cup green lentils - Harvest Health Foods, well rinsed

 

SLOPPY JOES

  • 2 Tbsp Olive oil

  • 1 Medium onion chopped

  • 2 cloves garlic pressed

  • 1 Medium Green Pepper

  • Sea salt and black pepper to taste

  • 1 15-ounce can tomato sauce

  • 1-2 Tbsp  coconut sugar, or omit, coconut sugar give a bit a malty taste

  • 1-2 Tbsp (15-30 ml) Annie's Worchester

  • 1.5 TSP Ground Cumin  Harvest Health Foods

  • 2 TSP Chili Powder - Harvest Health Foods

  • 1 Tsp pinch smoked paprika - Harvest Health Foods

  • Buns for serving.

 

Instructions:

  1. Rinse Lentils and in small sauce pan, add 1.5 Cups Water.

  2. Bring to a low boil, then reduce heat to a simmer and cook uncovered for about 18 minutes, or until tender. The water should have a constant simmer (not boil). Drain off any excess liquid and set aside.

  3. In large skillet over medium heat add oil, onion, and bell pepper. Season with a pinch each salt and pepper and stir to combine.

  4. Saute for 4-5 minutes, stirring frequently, or until the peppers and onions are tender and slightly browned.

  5. Add garlic, mixing constantly till fragrant 1-2 minutes.  

  6. Next add coconut sugar, chili powder, cumin, and paprika. Mix constantly for 1-2 minutes for spices to bloom.  Should be fragrant and will darken in color.

  7. Add Tomato Sauce and Worcestershire sauce. Mix and warm through.

  8. Once the lentils are cooked, add them to the skillet as well, and stir to combine.

  9. Continue cooking the mixture over medium-low heat until completely warmed through and thick, stirring occasionally - about 5-10 minutes.

  10. Taste and adjust flavor as needed, adding more chili powder and/or cumin for smokiness, salt for saltiness, coconut sugar for sweetness, or Worcestershire for depth of flavor.

  11. Serve the mixture on toasted buns.
