Raw Cacao Brownies
It's all about the ingredients. All natural, raw, all good-for-you ingredients.
Ingredients:
- 2 Cups Medjool Dates, soaked in hot water for 10 minutes
- 1 cup shelled raw pecans (reserve a few nice pieces for decoration)
- 1 cup shelled walnut halves (reserve a few nice pieces for decoration)
- 1/2 Cup Raw Cacao Powder
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Ground Cinnamon
- 1/2 Teaspoon Ground Ginger
- 1/2 Teaspoon Ground Nutmeg
- 1/2 Teaspoon Ground Cardamom
- Pinch of Salt and A Pinch of Cayenne (If desired)
Line a 8x8 or 9x9 pan with parchment paper
Place soaked, drained dates into a food processor bowl. Process with pulse to start breaking down dates. Add all remaining ingredients and process till well blended. Depending on the size of your processor bowl, you may need to scrape down the bowl several times to incorporate all the ingredients. Mixture should hold together when pressed.
Press mixture into pan, smoothing top with an offset metal spatula. If too sticky, slightly coat the spatula with coconut oil spray. Place in fridge for at least one hour. Can be made ahead and stores tightly wrapped in fridge for a week.
To serve, remove whole brownie from pan with the aid of the parchment. Place on cutting board and slice into neat small squares. Dust with more cacao powder or cinnamon. Decorate with reserved nuts. Wrap and refrigerate any leftovers.
