Need an exciting snack for the demanding back-to-school season?
We've got you covered! We think every day is worth celebrating, so allow us to introduce you to our Celebration Protein Snack Bites. They bring so much to the table, like protein, satiating fats, hearty oats, and some birthday-cake-flavored fun! On top of that, they're gluten-free and make-ahead friendly for lunchboxes, after-school snacks, field-side fuel, or any time at all!
Ingredients:
- 1 cup nut butter (we're using peanut)
- 1.5 cups rolled oats
- 1 scoop vanilla protein powder
- 1/4 cup mini white chocolate chips like Enjoy Life
- 2 T rainbow sprinkles like Watkins
- 1-2 T maple syrup, or preferred sweetener
- 2 t vanilla extract
- 1/4 t sea salt
Method:
- Mix all ingredients in a large bowl until thoroughly combined
- Roll into 1" balls
- Place formed balls on parchment-lined baking sheet
- Let set in the freezer for 15 minutes
- Remove from the freezer
- Store in an air-tight container in the refrigerator for up to 10 days
