Don't overthink the combination of veggies, just use what is fresh or even what needs to get used up in the refrigerator!   This isn't an exact recipe just use what you feel is right. Trust your instincts.

Your foil package should be large enough to seal in about 4 cups of veggies.( 2 24" sheets.)  Depending on how thick my foil is I might double up the foil package so that it will not rip when flipping it on the grill.

The Essentials:

1 medium Onion - sweet or purple cut into wedges

Green, Yellow, or  Red Peppers.  About 2 cups.  Make it colorful!

1 Jalapeno, seeded and sliced if you want some spice.  Or a dash of chili flakes can do the same.

Cherry or Grape tomatoes - whole.  A Big Handful. These are delicious as they POP when you eat them.

3-4 cloves  of Garlic - rough chopped

The Extras - Use what is in season.

Fresh Herbs or dried herbs.  I always have a big batch of fresh Thyme and parsley growing on my deck so those are always easy additions.  But feel free to head to your spice rack. Add Italian seasoning or even try a teaspoon of smoked paprika, that will make your veggies extra smokey special.

Zucchini or summer squash sliced into rings.  Great with Italian seasoning, or if you have Italian Dressing, use that for your flavor booster.  Just reduce the amount of olive oil.  Top with Feta Cheese when serving - Yum!

Asparagus trimmed to 2-inch pieces -  Add fresh lemon slices.

Garbanzo Beans.  Yes - rinsed from the can - preferably no salt added. These beautiful protein-filled beans will add some sustenance to your veggies.  Also great for those non-meat eaters!

Assembly:  Lay out your foil packet,  spread out veggies, and season with salt and pepper,  Drizzle with Olive Oil and herbs of choice.  Toss lightly and seal your foil package.

Grill packet on grates for about 20 minutes flipping 1/2 way.   Carefully remove from grill using a cookie sheet and let cool till you can handle it safely.  Slice the end of the package open and pour it into a serving bowl.  Taste for additional salt or pepper.

Enjoy!  Get creative with your own flavor combinations.
