Maple Glazed Sweet Potatoes

Maple Glazed Sweet Potatoes - recipie from Vegetarian Times 

3 LB Peeled and Cubed 1” Sweet Potatoes

1 Cup Local Maple Syrup

¼ Cup Braggs Organic Apple Cider Vinegar

1 TBS Olive Oil

Salt – 1 tsp + to season

Pepper to season

½ TSP Cinnamon

2 TBS Unsalted Sunflower seeds, pumpkin seeds or peacans


Preheat oven to 425°F.

  • In a 9"x13" baking dish, combine maple syrup, vinegar, ½cup water, oil, salt and cinnamon.
  • Add the sweet potatoes and stir to coat.
  • Cover dish tightly with foil and bake for 10 minutes. Remove the foil and bake for 30~35 minutes more, basting the potatoes every 10 minutes with the maple mixture until the maple mixture thickens and the sweet potatoes begin to glisten and brown.
  • Remove from the oven, season with more salt and pepper, if desired and stir in desired topping seeds.
