Quinoa Coconut Oat Bar Recipe Printable
Ingredients
- 1 - Coconut cooking spray
- 1 cup - organic old fashioned oats, dry
- 1 cup - organic quinoa, uncooked
- 1/2 cup - coconut flakes
- 1 cup - raw pecans, rough chopped
- 1 cup - cranberries, dried
- 1/4 teaspoon - salt
- 1/2 cup - peanut butter, all-natural
- 3/4 cup - honey
- 1 tablespoon - coconut oil
- 3 tablespoon - organic brown sugar
Directions
- Preheat oven to 350 degrees. Spray a ceramic or glass 9X13 inch baking dish with cooking spray.
- Spread oats, pecans and quinoa onto a cookie sheet and toast in preheated oven for 8 minutes - mix every few minutes. (watch to be sure and not overcook as some ovens may be warmer). Place mixture in a large bowl and add coconut, nuts, and dried cranberries.
- In a medium saucepan, combine salt, peanut butter, honey, oil, and brown sugar. Bring to a boil over medium heat, then immediately remove from heat and pour over the oat mixture. Stir together until dry ingredients are evenly coated.
- Pour into prepared baking dish, pressing the mixture down into the pan. Bake for 15 minutes.
- Cool for up to 2 hours, then cut and serve.
- Drizzle with chocolate for extra flare.
