Veggie Sausage Grill - As heard on Jq99!
Grilled Veggie and Sausage Salad
Serves 4
- 1 LB Fresh Local Pork Sausage or Tofurky Sausages
- 4 ears corn, silks & husks removed, husks
- 4 tablespoons butter/coconut oil, room temp
- 1/4 teaspoon ground chipotle pepper
- 1 large red bell pepper, cut into quarters and cored. Rub lightly with oil.
- 1 zucchini, sliced in half lengthwise and rubbed lightly with oil
- 1/4 cup red onion, halved for grilling
- 1/2 cup fresh cilantro, roughly chopped
- Dressing: 1 teaspoon ground cumin
- 2 tablespoons olive oil
- Juice of two limes
- 1-2 Tbs of Local Honey
- Salt and freshly ground pepper to taste
- 1 bunch of fresh lettuce for salad.
- 1/4 cup feta cheese, crumbled is desired
Directions
1. Preheat grill to med high heat. Season the grill grates with a little vegetable oil. In a small bowl, mix the butter/coconut oil and ground chipotle pepper. Rub mixtures over the kernels.
2. Place corn, red peppers zucchini, onion on the grill. Turning veggies till they are crisp tender. These will cook at different rates, remove as vegetables are finished. When cool enough to handle, chop into 1 inch pieces.
3. Cook sausage until golden browned. Adjust temp and time if using Tofurky.
4. Mix Dressing: Olive oil, Cumin, lime juice, honey, Salt and Pepper. Mix thoroughly, adjust seasonings.
5. Wash and dry lettuce, fill serving bowl, layer roasted veggies. Slice or place whole sausages on the salad. Drizzle with dressing, or serve on side.
6. If desired top with crumbled Feta. Delicious warm or chilled for left overs for the following day.
