Cauliflower Rice

Cauliflower Fried Rice

Ingredients

  • 1- Bag Riced Cauliflower -  (Boulder Brand - favorite cliantro)  Boulder Cilantro Lime

  • 2 tbsp. vegetable oil or coconut oil

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 2 carrots, diced

  • 3 cups snow peas

  • * Add additional veggies as desired - Sliced peppers for color 

  • 1/4 cup soy sauce or coconut aminos -  more or less to taste

  • 3 scallions, chopped

  • 1/4 cup cashews

 

Instructions

  1. Heat oil in large wok  or large skillet over medium-high heat. 

  2.  Add onion and cook until softened, about 5 minutes.

  3. Add garlic and cook another minute.

  4. Raise heat to high.

  5. carrots - toss till starting to soften

  6. Cauliflower - toss for a few more minutes, till warmed through

  7. snow peas and soy sauce. Cook, flipping frequently, until veggies become tender crisp and cauliflower begins to brown in spots, about 5 minutes.

  8. Divide among plates and top with scallions and cashews
