Ingredients

1- Bag Riced Cauliflower - (Boulder Brand - favorite cliantro)

2 tbsp. vegetable oil or coconut oil

1 medium onion, diced

3 garlic cloves, minced

2 carrots, diced
-
3 cups snow peas

* Add additional veggies as desired - Sliced peppers for color

1/4 cup soy sauce or coconut aminos - more or less to taste

3 scallions, chopped

1/4 cup cashews
Instructions

Heat oil in large wok or large skillet over medium-high heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook another minute.

Raise heat to high.

carrots - toss till starting to soften
-
Cauliflower - toss for a few more minutes, till warmed through
-
snow peas and soy sauce. Cook, flipping frequently, until veggies become tender crisp and cauliflower begins to brown in spots, about 5 minutes.

Divide among plates and top with scallions and cashews
